Carol’s motto has always been LES – for Live Every Second. Every journal entry or note she wrote would end with LES. She put that motto into action in her life by taking advantage of every adventure and opportunity that came along.
She even hiked the Subway in Zion National Park when she was 65 years old! And a week after that she backpacked 18 miles. She was the oldest of 8 children born to Caroline Eyring and Glen Miner.
Carol was born in Safford, Arizona, and grew up in Logan and Riverton, Utah. Her family always owned dairy cows and other animals, so Carol knew what it was like to have farm chores to do. She liked to tell the story of having to collect the eggs every morning and clean them to sell.
She would sometimes break the especially dirty ones so she didn’t have to clean them. Carol graduated from Jordan High School where she was a student body officer. She enjoyed her Beet Digger days and continued meeting for monthly luncheons with her high school friends.
Carol attended BYU, but when she met and fell in love with Ed Morgan she transferred to the University of Utah and then Utah State University to attend college with him. She and Ed married in the Salt Lake Temple on October 3, 1951, and both continued school until Ed graduated and became an officer in the Air Force. The Air Force sent Ed to Florida; for one glorious year Carol was able to be with Ed and their new baby in Florida.
This year started her life-long love of the ocean. When Ed was stationed in Korea, Carol returned to Sandy, UT, to live with parents. During this time Carol contracted polio and worked very hard to overcome paralysis in her legs.
When Ed returned from Korea, the family lived in Murray, UT, and two more children were born. The family moved to Southern California in 1960. Those were wonderful years where Carol drove her children and all the neighbor children to the beach every day, always taking a different route.
Her children teased her that they had been on every road between their house and the beach. While in California, Carol completed her college education at California State Long Beach with a degree in Elementary Education. She did this with three small children at home.
The family moved to Pittsburgh, PA, for a year where their fourth child was born. Then back to Utah where Carol started her teaching career. Carol taught kindergarten, 4th grade and most other grades at Fortuna School and Oakridge School.
Carol was legendary for knowing the name of every wildflower and sharing her knowledge with the Scouts and Young Women. She loved serving in the Stake YW and taking the girls on their high adventure hikes in the Tetons. When she was a den leader her Cub Scouts had a hard time keeping up with her on hikes.
She volunteered with the Salt Lake Symphony, chairing the annual Vienna ball. Carol spent 33 years on the Mt. Olympus Community Council, making her the longest serving member.
She was council chair for some of those years. She was a driving force in making sure that Fortuna Park was built. Carol’s main joy was swimming.
She spent many early mornings in the pool, traveled the country to attend US Swimming Masters meets and held swim records in her age group. She had hundreds of medals from all her swim meets. She participated in swimming at the Huntsman World Senior Games in St. George, UT, longer than any other person.
Carol delighted in her 4 children: Janie (Scott), Scott (Kathryn), Jim (Joyce) Dave (Russ), 11 grandchildren and 24 great-grandchildren. Funeral services will be held at 5:00pm on Saturday, May 4, 2019, at Holbrook Mortuary, 3251 South 2300 East, Salt Lake City. Friends may visit with family at 4:00pm on Saturday prior to services at the Mortuary.
Interment: 10am, Tuesday, May 7, 2019 at the Utah Veterans Cemetery and Memorial Park, 17111 South Redwood Road (1700 W.), Bluffdale, UT 84065.
