Two years later, Paul’s family eventually made their home in the Beacon Hill neighborhood of Seattle in 1970 when he was six years old. While at Cleveland High School, Paul was a yell leader and a talented wrestler. Paul was an accomplished restaurateur, sommelier, and executive chef. He became an admired and renowned fixture in the Seattle restaurant community early in his career.

Paul grew up around the hospitality industry, working at his family’s restaurants at an early age. Paul began his hospitality and restaurant career as a waiter at the Palm Court in the Downtown Seattle Westin Hotel in 1981. Paul continued his career at the Salish Lodge in 1987.
