Dunnellon: Ernest Dario Monaro, 81, died at home on Monday May 28, 2018 while being cared for by his wife Elisa and Hospice of Marion County. Ernie was born into this life on May 17, 1937 in Trieste, Italy. He was the son of the late Marcello and Maria Monaro.

Ernie came from Italy as a young man to New York while working in the kitchens aboard the Italian Cruise Liner “Vulcania”. He devoted his young life towards becoming a master of the culinary arts. He achieved that goal becoming the executive chef at the Shenorock Shore Club, Milton Point, in Rye, New York and he remained in that position for twenty two years.

In the early 1990’s, Chef Ernie moved to Delray Beach, Florida to enjoy the warmer weather. He eventually became the executive sous chef at Gleneagles Country Club in Delray Beach Florida. There, he met and married his wife of twenty three years Elisa.

Ernie took much pleasure in being a Dad to his son, Anthony. He taught Anthony the game of golf which he loved and, they continued to play together whenever they had the chance. After eleven wonderful years at Gleneagles and the Delray Beach area Ernie and his family moved to Dunnellon Florida seeking a gentler, quieter way of life.

Upon deciding that he wasn’t quite ready to retire he took a position at Juliette’s restaurant at Rainbow Springs Country Club and eventually took over the kitchen as the executive chef. He remained in that position until the club closed in December of 2015. He loved being at home surrounded by the quite woodlands and took much pleasure in completing projects that made his house a home.

He enjoyed relaxing and watching every sporting event he could. He was an excellent golfer and cycled extensively in his younger years. He absolutely loved to cook for his wife Elisa and all of his family and friends.

He could never say no, and always had a smile for whomever he met. His constant companions at home were his “lucky” dogs, Huey and Montana. Those left to cherish his memories are his wife Elisa Monaro; his son, Anthony Monaro and wife, Jennifer and Ernie was a proud “Nono” to 4 month old Easton Lee his first grandchild.

He leaves a brother Gianfranco Monaro and daughter, Antonella Potok, husband Alessandro, their two sons, Nicholas and Manuel, and son Claudio and wife Nicoletta. Brother, Malvino Monaro and his wife Vasso all of Trieste Italy. Cousin, Luciano Colella, his wife Mariella, their two daughters, Loredona and Patricia of Rome, Italy.

Ernie also had special friendships, which he cherished, and regarded as family. Ernie was preceded in death by brother Sergio, and two sisters Marcella and Luciana. Family will be receiving relatives and friends for a time of sharing and reflection on Friday, June 1, 2018 at 5:00PM followed by a memorial service celebrating Ernie’s life at 7:00PM at Roberts Funeral Home of Dunnellon.
