Obituary for Joseph Lee Chaffin On July 26, 1954, Joseph Lee Chaffin, was born to William Clifford and Gracie Leyon (Starkey) Chaffin in Okemah, Oklahoma. He grew up and attended public schools in Surprise, Arizona, where his parents owned their own custom cotton harvesting business. His family worked together in the cotton and vegetable fields.

Later, he began a career in construction; working at first with his oldest brother, David, later with older brother Danny. Danny and Joe worked many years for ERC Construction building apartments. But Uncle Joe’s, as his family fondly called him, most important job was making the gravy for the Sunday morning family breakfasts at Danny’s.

He was known as the “Gravy King”. Gravy and fry bread were his specialties. His hobbies included making miniature trinkets, riding his Harley, watching OU and New England Patriots football, reading, and going to yard sales.

He always will be remembered as someone that helped others…everything he purchased at the yard sales, he gave to others. He loved El Camino’s and always wanted one with strictly snakeskin interior. Uncle Joe passed away peacefully at his home in Muskogee on Sunday evening, September 16, 2018.

He was preceded in death by his parents, Clifford and Gracie; and his brothers, David and James Chaffin. He is survived by his brother, Danny Chaffin and wife Laurie; sisters, Charlotte Brothers and Jeannette Sanchez and husband Manuel; nephews, Shane Chaffin, Joey Chaffin (Jami), J.D. Chaffin, J.J. Chaffin (Hailei), Manuel Sanchez Jr (Kaylin), Billy Dye and James Skaggs; nieces, Shauna Padgett (Rob), Alicia Grasmick (J.W.), Gracie Chairez (Eddie), Tina Garrison and Carol Jones; along with other family members and many friends. A celebration of his life will be 2:00 p.m. Wednesday September 26, 2018 at Cornerstone Funeral Home Chapel with Chaplain Bill Crow officiating.

Honorary pallbearers will be Shane Chaffin, Shauna Padgett, Joey Chaffin, Gracie Chairez, James David Chaffin, Jesse James Chaffin, Alicia Grasmick, and Manny Sanchez Jr. To send flowers or a memorial gift to the family of Joseph Lee Chaffin please visit our Sympathy Store.
